🧾 Ingredients
- 1 cup natural peanut butter (100% peanuts, no sugar)
- ½ cup plain Greek yogurt (unsweetened)
- 1 large egg
- ½ cup oats (blend into oat flour OR use whole for texture)
- ½ tsp baking powder
- ½ tsp cinnamon (optional)
- 1 tsp vanilla extract (optional)
- Optional add-ins:
- Sugar-free dark chocolate chips
- Chopped nuts
- Seeds (chia / flax)

👩🍳 Instructions
1️⃣ Preheat oven
- Heat oven to 350°F (175°C)
- Line a baking tray with parchment paper
2️⃣ Mix wet ingredients
- In a bowl, add peanut butter, Greek yogurt, and egg
- Mix until smooth and creamy
3️⃣ Add dry ingredients
- Add oats (or oat flour), baking powder, cinnamon, and vanilla
- Mix until a thick cookie dough forms
4️⃣ Shape cookies
- Scoop dough (about 1½ tbsp each)
- Place on tray and gently flatten with spoon
5️⃣ Bake
- Bake for 12–15 minutes
- Edges should be set, centers soft
6️⃣ Cool
- Let cool 5–10 minutes (they firm up as they cool)
