🍪 Healthy Energy Cookies

(NO Flour • NO Sugar • High Protein)

🧾 Ingredients

  • 1 cup natural peanut butter (100% peanuts, no sugar)
  • ½ cup plain Greek yogurt (unsweetened)
  • 1 large egg
  • ½ cup oats (blend into oat flour OR use whole for texture)
  • ½ tsp baking powder
  • ½ tsp cinnamon (optional)
  • 1 tsp vanilla extract (optional)
  • Optional add-ins:
    • Sugar-free dark chocolate chips
    • Chopped nuts
    • Seeds (chia / flax)

👉 No sugar, no white flour, no honey, no maple syrup


👩‍🍳 Instructions

1️⃣ Preheat oven

  • Heat oven to 350°F (175°C)
  • Line a baking tray with parchment paper

2️⃣ Mix wet ingredients

  • In a bowl, add peanut butter, Greek yogurt, and egg
  • Mix until smooth and creamy

3️⃣ Add dry ingredients

  • Add oats (or oat flour), baking powder, cinnamon, and vanilla
  • Mix until a thick cookie dough forms

4️⃣ Shape cookies

  • Scoop dough (about 1½ tbsp each)
  • Place on tray and gently flatten with spoon

5️⃣ Bake

  • Bake for 12–15 minutes
  • Edges should be set, centers soft

6️⃣ Cool

  • Let cool 5–10 minutes (they firm up as they cool)
