Ingredients

  • 1 1/2 pounds thinly sliced chicken breasts
  • Kosher salt fresh black pepper, and garlic powder (for seasoning)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 cup buttermilk
  • 1 tablespoon hot sauce
  • 1 large egg
  • 2 cups or more, as needed Panko bread crumbs
  • Vegetable or canola oil for frying
  • 12 slices mozzarella cheese
  • 12 slider rolls
  • Bang Bang Sauce for serving

Instructions

  • Start by seasoning both sides of the chicken breasts with salt, pepper, and garlic powder.
  • Set up a breading station: In the first bowl, mix the flour and cornstarch. In the second bowl, whisk together the buttermilk, hot sauce, and egg. In the third bowl, add the Panko bread crumbs.
  • Dredge each piece of seasoned chicken in the flour mixture, tapping off any excess. Next, dip it into the buttermilk mixture, allowing any extra liquid to drip off. Finally, coat it thoroughly in the bread crumbs, pressing gently to ensure an even layer. Place the breaded chicken on a plate and repeat with the remaining pieces.
  • Heat a thin layer of oil in a skillet over medium heat. Once hot, add the breaded chicken cutlets in batches, making sure not to overcrowd the pan. Cook for 2-3 minutes per side, adjusting based on thickness, until the internal temperature reaches 165°F. Transfer the cooked cutlets to a paper towel-lined plate while frying the rest, adding more oil as needed.
  • In a small bowl, whisk together the Bang Bang sauce and set aside.
  • To assemble the sliders, cut the fried chicken into smaller pieces and place them on the slider buns. Top each with a slice of mozzarella cheese while the chicken is still warm, then drizzle with Bang Bang sauce. Serve immediately and enjoy!

Notes

  • If preparing these sliders ahead of time, keep the chicken cutlets warm in a 325°F oven for up to an hour before serving. You can also reheat them this way straight from the refrigerator.
  • For the best flavor, let the Bang Bang Sauce come to room temperature before serving so it doesn’t cool down the sliders. If made in advance, take it out of the fridge about 30 minutes prior to serving.
  • If you don’t have a meat thermometer, slice into one of the cutlets to ensure there’s no pink remaining before serving.
