  • 2 lbs beef tenderloin whole, trimmed
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 2 sprigs fresh rosemary chopped
  • 2 sprigs fresh thyme chopped
  • Salt and ground black pepper to taste

Instructions
 

  • Trim the beef tenderloin and season generously with salt and pepper. Preheat the oven to 425°F (220°C).
  • In a bowl, combine olive oil, garlic, rosemary, thyme, salt, and pepper to create the garlic-herb rub. Massage this mixture onto the tenderloin.
  • Heat a cast-iron skillet over medium-high heat. Add olive oil and sear the tenderloin on all sides until golden-brown.
  • Place the skillet in the preheated oven and roast for 20-30 minutes, depending on your preferred doneness. Use an oven thermometer (135°F/57°C for medium-rare).
  • Remove from the oven and let the tenderloin rest for 10-15 minutes before slicing.
