I have to admit, this Brie and Cranberry Tart was love at first bake for me. The flaky puff pastry, creamy brie, and sweet-tangy cranberries work together like magic. I made these tarts for a cozy gathering, and not a single one was left on the plate.

- puff pastry – 2 sheets
- brie cheese – 8 ounces
- fresh cranberries – 1 ½ cups
- brown sugar – 2 tablespoons
- ground cinnamon – ½ teaspoon
- fig preserves – 3 tablespoons
- egg beaten – 1
- coarse sugar – 1 tablespoon
- fresh thyme – 1 teaspoon for garnish
Start by preheating your oven to 425°F. Line a baking sheet with parchment paper to create a non-stick surface and reduce cleanup time later.
Add the fresh cranberries to a mixing bowl. Toss them with brown sugar and ground cinnamon until they’re evenly coated. This step adds subtle sweetness and a cozy warmth to the tart.
Unfold the puff pastry sheets onto a clean surface and smooth out any creases. Use a knife to cut each sheet into six equal rectangles, giving you 12 pieces total. This size is perfect for appetizer portions.
Spread a small dollop of fig preserves onto each pastry rectangle, leaving a thin border around the edges. Place two slices of brie atop the preserves, then spoon a generous amount of the sweetened cranberries over the cheese.
Gently fold the edges of the pastry inward to create a slight border. Brush the edges with the beaten egg and sprinkle with coarse sugar for a golden, crunchy finish. Place the tarts on the baking sheet and bake for 15–20 minutes, until the puff pastry is golden and the brie is melted.
Remove the tarts from the oven and immediately top each with a sprinkle of fresh thyme leaves. This adds a pop of green and a hint of savory flavor. Serve the tarts warm for the best taste and texture.
