- 1 pound boneless skinless chicken breasts cut into 1-inch pieces
- ⅓ cup all-purpose flour
- 3 tablespoons cornstarch
- ⅛ teaspoon cayenne pepper
- 1 teaspoon garlic powder
- ⅓ cup buffalo wing sauce e.g., Frank’s Buffalo Wing
- 1 tablespoon olive oil
- Burrito-size tortillas
- Ranch dressing
- Diced tomatoes
- Finely chopped lettuce
- Mexican cheese blend
Start by cutting the chicken breasts into 1-inch pieces. In a mixing bowl, combine the flour, cornstarch, cayenne pepper, and garlic powder. Season the chicken pieces with pepper, then dredge them in the flour mixture until well-coated.
Heat a tablespoon of olive oil in a large skillet over medium-high heat. Add the coated chicken pieces and cook for about 3 to 4 minutes on each side, or until they are golden brown and cooked through. Once done, transfer the chicken to a bowl and toss with the buffalo wing sauce until evenly coated.
