Prep Time 10 minutes
Cook Time 20 minutes

Ingredients

  • 1 pound boneless skinless chicken breasts cut into 1-inch pieces
  • cup all-purpose flour
  • 3 tablespoons cornstarch
  • teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • cup buffalo wing sauce e.g., Frank’s Buffalo Wing
  • 1 tablespoon olive oil
  • Burrito-size tortillas
  • Ranch dressing
  • Diced tomatoes
  • Finely chopped lettuce
  • Mexican cheese blend

Instructions

  • Start by cutting the chicken breasts into 1-inch pieces. In a mixing bowl, combine the flour, cornstarch, cayenne pepper, and garlic powder. Season the chicken pieces with pepper, then dredge them in the flour mixture until well-coated.
  • Heat a tablespoon of olive oil in a large skillet over medium-high heat. Add the coated chicken pieces and cook for about 3 to 4 minutes on each side, or until they are golden brown and cooked through. Once done, transfer the chicken to a bowl and toss with the buffalo wing sauce until evenly coated.
  • Using the same skillet, lightly fry the tortillas over medium heat for about 10 seconds on each side. This step makes the tortillas more pliable and enhances their flavor.
  • Lay a warm tortilla flat and start layering your ingredients. Begin with a scoop of the buffalo chicken, followed by a drizzle of ranch dressing. Add chopped lettuce, diced tomatoes, and a sprinkle of the Mexican cheese blend. Fold in the sides of the tortilla, then roll it up tightly from the bottom to enclose the filling.

Notes

  • Ingredient Freshness: Use fresh lettuce and tomatoes for a crisp and refreshing bite.
  • Even Coating: Ensure the chicken pieces are evenly coated with the flour mixture for a consistent texture.
  • Oil Temperature: Make sure the oil is hot enough before adding the chicken to achieve a crispy exterior.
  • Tortilla Warmth: Warming the tortillas makes them more flexible and less likely to tear during wrapping.
