- 2 cups shredded chicken cooked
- 1 cup shredded cheddar cheese
- ½ cup frozen or canned corn drained
- ½ cup black beans rinsed
- 1½ cups fresh spinach chopped
- 10 small flour tortillas
- Southwest seasoning to taste
Start by combining your shredded chicken, cheddar cheese, spinach, corn, and black beans in a mixing bowl. Sprinkle in your favorite Southwest seasoning, then toss everything together until well-mixed.
Lay a tortilla flat and spoon 2-3 tablespoons of the filling onto the center. Roll it tightly like an egg roll, folding in the sides to seal. Repeat the process with the remaining tortillas and filling.
Heat a non-stick pan on medium heat. Place the rolled tortillas seam-side down and cook until golden brown, flipping carefully to crisp up all sides. Alternatively, you can fry them in a bit of oil for extra crispiness.
For the dip, mix mayonnaise, sriracha, ketchup, ranch seasoning mix, southwest seasoning, adobo seasoning, and chili powder in a bowl. Add milk gradually and stir until the dip reaches your preferred consistency. Cover and chill for at least one hour to allow the flavors to meld.
