Buffalo Wild Wings Southwest Dippers Recipe

Rebecca
When I first tasted the Southwest Dippers at Buffalo Wild Wings, I was hooked. The flavors were bold yet comforting, with just the right blend of creaminess, spice, and Tex-Mex zest. If you're anything like me, recreating restaurant-level dishes at home is a satisfying adventure—not to mention the joy of tweaking flavors to suit your tastes.

Ingredients

  • 2 cups shredded chicken cooked
  • 1 cup shredded cheddar cheese
  • ½ cup frozen or canned corn drained
  • ½ cup black beans rinsed
  • cups fresh spinach chopped
  • 10 small flour tortillas
  • Southwest seasoning to taste

Instructions

  • Start by combining your shredded chicken, cheddar cheese, spinach, corn, and black beans in a mixing bowl. Sprinkle in your favorite Southwest seasoning, then toss everything together until well-mixed.
  • Lay a tortilla flat and spoon 2-3 tablespoons of the filling onto the center. Roll it tightly like an egg roll, folding in the sides to seal. Repeat the process with the remaining tortillas and filling.
  • Heat a non-stick pan on medium heat. Place the rolled tortillas seam-side down and cook until golden brown, flipping carefully to crisp up all sides. Alternatively, you can fry them in a bit of oil for extra crispiness.
  • For the dip, mix mayonnaise, sriracha, ketchup, ranch seasoning mix, southwest seasoning, adobo seasoning, and chili powder in a bowl. Add milk gradually and stir until the dip reaches your preferred consistency. Cover and chill for at least one hour to allow the flavors to meld.
  • Cut the dippers in half diagonally and serve warm with a hearty bowl of southwest ranch dip. Dig in and enjoy the deliciousness!

Notes

  • Don’t Overfill the Tortillas: Overstuffing can cause the filling to spill out while cooking, so use just enough for a neat roll.
  • Chill the Ranch Dip: Chilling the sauce allows the flavors to fully develop, giving you that creamy, zesty perfection.
  • Choose Fresh Ingredients: Fresh veggies like spinach and corn elevate the flavor and texture of the filling.
  • Adjust the Seasoning: Taste the filling before rolling the tortillas. Feel free to add more seasoning or spice based on your preferences.
