Ingredients

  • Boneless ribeye or New York strip steaks
  • Cajun seasoning
  • Olive oil
  • Salt and black pepper
  • Apricot preserves
  • Orange juice
  • Dijon mustard
  • Garlic
  • Soy sauce
  • Honey

Instructions

  • Start by combining apricot preserves, orange juice, Dijon mustard, minced garlic, soy sauce, honey, and a sprinkle of Cajun seasoning in a small saucepan. Stir everything together over medium heat until it simmers. Reduce the heat and allow the glaze to thicken for about 5–7 minutes. Set it aside to cool slightly.
  • Pat your steaks dry with a paper towel and season both sides generously with Cajun seasoning, salt, and pepper. Leave them on the counter for 15–20 minutes to come to room temperature and soak in all the amazing flavors.
  • Preheat your grill or skillet to high heat. Brush the grates or skillet surface with olive oil to prevent sticking. This step ensures a perfect, even sear.
  • Place the steaks on the hot grill or skillet. For a medium-rare finish, cook each side for about 3–4 minutes. Adjust the time based on your preferred level of doneness. The sizzle will tell you you’re doing it right!
  • During the last 1–2 minutes of cooking, generously brush both sides of the steaks with the apricot orange glaze. Let the glaze caramelize slightly for a sticky, flavorful crust.
  • Remove the steaks from the heat and allow them to rest for a few minutes before serving. This helps retain the juices and ensures a tender bite. Serve with extra glaze on the side for dipping!

Notes

  • Preheat to Perfection: Always preheat your grill or skillet to get a good sear on the steaks.
  • Glaze Last: Apply the glaze during the final minutes of cooking to avoid burning the sugars in it.
  • Room Temperature Steaks: Allow the steaks to sit at room temperature before cooking for even doneness.
  • Control Sweetness: Adjust the honey or apricots based on your preference for sweetness in the glaze.
