You know that feeling when you create something so delicious it becomes everyone's favorite? That’s exactly what happened when I made these Cheesy Ranch Potatoes and Sausage. They're simple, comforting, and loaded with flavor.

Ingredients
  

  • Baby red potatoes
  • Smoked sausage
  • Shredded cheddar cheese
  • Ranch seasoning mix
  • Olive oil
  • Garlic powder
  • Paprika
  • Black pepper
  • Fresh parsley
  • Sour cream optional
  • Green onions optional

Instructions
 

  • Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil to make cleanup a breeze.
  • Quarter your baby red potatoes and toss them in a large mixing bowl. Drizzle with olive oil and sprinkle them with garlic powder, paprika, black pepper, and the ranch seasoning mix. Make sure everything is evenly coated.
  • Spread the seasoned potatoes in a single layer on your baking sheet. Roast them for about 25-30 minutes, flipping them halfway through to ensure even crispiness.
  • Take the baking sheet out of the oven and scatter the sliced smoked sausage over the potatoes. Toss everything together, then spread it back out evenly.
  • Sprinkle shredded cheddar cheese generously over the potato and sausage mixture. Pop the sheet back into the oven and bake for another 10-15 minutes. This allows the cheese to melt into ooey-gooey perfection.
  • Once bubbly and golden, remove your dish from the oven. Garnish with freshly chopped parsley or green onions for a touch of freshness and color. Serve it family-style or in individual bowls with a dollop of sour cream, if desired.
