When I first tried these chicken burgers with avocado corn salsa, I couldn't believe how easy they were to make! The combination of juicy, flavorful chicken patties with the tangy, fresh salsa was simply irresistible.

Ingredients
  

  • 1 lb ground chicken
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1/4 cup onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 avocado diced
  • 1 cup corn kernels fresh, canned, or frozen
  • 1/2 red bell pepper diced
  • 1/4 cup fresh cilantro chopped
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Lettuce leaves
  • Tomato slices
  • Sliced red onion
  • Cheese optional
  • Burger buns your choice of brioche, whole wheat, or gluten-free

Instructions
 

  • To begin, mix the ground chicken, breadcrumbs, egg, onion, garlic, chili powder, cumin, salt, and pepper in a large bowl. Once everything is evenly combined, divide the mixture into four portions and shape each into a patty.
  • Heat up a grill or pan over medium-high heat. Lightly oil it to prevent sticking. Place the patties on and cook for 5-7 minutes per side, or until the internal temperature reaches 165°F. Avoid pressing down on the patties to keep them juicy! 🍳
  • While the burgers are cooking, toss the diced avocado, corn kernels, bell pepper, cilantro, lime juice, salt, and pepper in a bowl. Mix gently to avoid smashing the avocado. You’ll love how vibrant this salsa looks and smells! ✨
