Ingredients

  • 2 lbs of chicken breast cooked and shredded 🐓
  • 2 cups marinara sauce choose a low-sugar or homemade version for a healthier option.
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 cups panko breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  • Start by setting your oven to 375°F (190°C). This will ensure it’s hot and ready by the time you assemble your casserole. Preheating is key to even cooking, so don’t skip this step!
  • Take your cooked and shredded chicken and spread it evenly in a baking dish. To boost flavor, season the chicken with salt, pepper, and Italian seasoning. These spices add a delicious base to your dish.
  • It’s time to get saucy! Pour marinara sauce over the chicken, making sure it’s evenly coated. Be generous here; the sauce keeps the casserole moist and flavorful with every bite.
  • Sprinkle a thick layer of mozzarella cheese on top of the marinara sauce. Then, for extra cheesiness, add a layer of Parmesan. The combination of these cheeses guarantees a rich, gooey texture.
  • Create a perfect golden crust by mixing panko breadcrumbs, garlic powder, and olive oil in a bowl. Stir until the crumbs are slightly moist, then sprinkle the mixture evenly over the top of the cheese layer. This step adds that irresistible crunch!
  • Cover the dish loosely with aluminum foil and bake in the preheated oven for 25 minutes. After that, remove the foil and bake for another 5 minutes to crisp up the breadcrumb topping. Once the top is golden brown, your casserole is ready to enjoy!

Notes

  1. Use fresh cheese - Always grate your cheese instead of using pre-shredded. It melts better and tastes amazing.
  2. Double up the recipe - This dish freezes well, making it perfect for meal prep.
  3. Add vegetables - Toss in diced bell peppers, zucchini, or mushrooms to pack in more nutrients.
  4. Spicy twist - Add red pepper flakes or a drizzle of hot sauce for a fiery kick.
