Chicken Spaghetti Casserole Recipe

When I first made chicken spaghetti casserole, I was amazed at how quickly it became a family favorite. The cheesy, creamy combination of chicken, spaghetti, and subtle spices creates pure comfort in every bite.

Ingredients
  

  • Chicken cooked and shredded
  • Spaghetti
  • Cream of mushroom soup
  • Sharp cheddar cheese grated
  • Green pepper
  • Onion
  • Jarred pimentos drained
  • Chicken broth
  • Lawry’s seasoned salt
  • Cayenne pepper
  • Salt and pepper

Instructions
 

  • Start by boiling a whole chicken or any cuts you like. Simmer it in water for about 30-45 minutes until tender. Once cooled, shred the chicken, and don’t forget to save the broth for the pasta and sauce.
  • Cook the spaghetti in the reserved chicken broth until al dente. This step adds extra flavor to the pasta. Make sure not to overcook it, as it will continue to soften in the oven.
  • Combine the cooked spaghetti, shredded chicken, cream of mushroom soup, diced green pepper, onion, and pimentos in a large bowl. Add 2 cups of cheddar cheese and season with Lawry’s salt, cayenne pepper, and black pepper. Mix well to coat everything in the creamy sauce.
  • Pour in chicken broth gradually, stirring each time, until the mixture is moist but not soupy. Taste and adjust the seasonings to your liking.
  • Transfer the mixture to a greased casserole dish. Top it with the remaining cheddar cheese and bake at 350°F for 45 minutes until bubbly and golden. Cover with foil if the cheese starts browning too much.
  • Once it’s out of the oven, give it a few minutes to set, then dig in and enjoy every creamy, cheesy bite!🧀 Pair it with a fresh side salad or garlic bread for a complete meal!

Notes

  • Use Freshly Grated Cheese: Freshly grated cheese melts better than pre-shredded and enhances the creamy texture. It also adds a richer, more authentic flavor to the dish.
  • Don’t Overcook the Pasta: Al dente pasta ensures it doesn’t become mushy during baking. This helps maintain the perfect bite and texture in every forkful.
  • Taste and Adjust Seasonings: Before baking, check if the flavors are just right. A small pinch of salt or cayenne can make all the difference. Don’t be afraid to tweak it to match your taste preferences!
