Ingredients

  • Spaghetti 12 oz.
  • Cooked Chicken 2–3 cups
  • Cream of Mushroom Soup 1 can, 10.5 oz.
  • Diced Tomatoes and Green Chilies 1 can, 10 oz.
  • Cheddar Cheese 2 cups, shredded
  • Chicken Broth 1 cup
  • Onion 1 small, chopped
  • Bell Pepper 1 cup, diced
  • Garlic 2 cloves, minced.
  • Seasonings
  • Olive Oil 1 tbsp

Instructions

  • Boil spaghetti in salted water until al dente (firm but cooked). This usually takes about 9–11 minutes. Drain the pasta and set it aside.
  • Heat olive oil in your skillet over medium-high heat. Add diced onion, bell pepper, and minced garlic. Sauté for 4–5 minutes until the vegetables are soft and fragrant. This step builds a flavor-packed base.
  • Reduce the skillet’s heat to medium. Stir in the cream of mushroom soup, diced tomatoes, green chilies, and chicken broth. Add a pinch of salt, pepper, and paprika. Whisk everything together until the sauce becomes thick and smooth, about 3–4 minutes.
  • Mix the cooked spaghetti, shredded chicken, and half of the cheddar cheese into the sauce. Stir everything well so that the pasta is evenly coated in the creamy mixture.
  • Transfer the mixture into a greased 9x13-inch casserole dish. Spread it out evenly and scatter the remaining cheese on top. Preheat your oven to 375°F (190°C) and bake for 20–25 minutes until the cheese melts and turns bubbly.
  • Once done, remove the casserole from the oven and allow it to cool slightly. Serve hot and enjoy!

Notes

  • Make It Healthier: Swap regular pasta with whole-grain or gluten-free options. Add more veggies like kale or broccoli into the sauce.
  • Go Dairy-Free: Use a vegan cheese substitute and coconut cream instead of soup for a dairy-free version.
  • Boost Flavor: Add a dash of Worcestershire sauce, smoked paprika, or cayenne to enhance the depth of flavor.
  • Avoid Over-Baking: Overcooking can dry it out. Bake just until the cheese is melted and bubbly.
