- Spaghetti 12 oz.
- Cooked Chicken 2–3 cups
- Cream of Mushroom Soup 1 can, 10.5 oz.
- Diced Tomatoes and Green Chilies 1 can, 10 oz.
- Cheddar Cheese 2 cups, shredded
- Chicken Broth 1 cup
- Onion 1 small, chopped
- Bell Pepper 1 cup, diced
- Garlic 2 cloves, minced.
- Seasonings
- Olive Oil 1 tbsp
Boil spaghetti in salted water until al dente (firm but cooked). This usually takes about 9–11 minutes. Drain the pasta and set it aside.
Heat olive oil in your skillet over medium-high heat. Add diced onion, bell pepper, and minced garlic. Sauté for 4–5 minutes until the vegetables are soft and fragrant. This step builds a flavor-packed base.
Reduce the skillet’s heat to medium. Stir in the cream of mushroom soup, diced tomatoes, green chilies, and chicken broth. Add a pinch of salt, pepper, and paprika. Whisk everything together until the sauce becomes thick and smooth, about 3–4 minutes.
Mix the cooked spaghetti, shredded chicken, and half of the cheddar cheese into the sauce. Stir everything well so that the pasta is evenly coated in the creamy mixture.
Transfer the mixture into a greased 9x13-inch casserole dish. Spread it out evenly and scatter the remaining cheese on top. Preheat your oven to 375°F (190°C) and bake for 20–25 minutes until the cheese melts and turns bubbly.
Once done, remove the casserole from the oven and allow it to cool slightly. Serve hot and enjoy!
- Make It Healthier: Swap regular pasta with whole-grain or gluten-free options. Add more veggies like kale or broccoli into the sauce.
- Go Dairy-Free: Use a vegan cheese substitute and coconut cream instead of soup for a dairy-free version.
- Boost Flavor: Add a dash of Worcestershire sauce, smoked paprika, or cayenne to enhance the depth of flavor.
- Avoid Over-Baking: Overcooking can dry it out. Bake just until the cheese is melted and bubbly.
