Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • 4 cups cooked five-grain medley rice or any wild rice of choice
  • 1 can 10.5 oz condensed cream of chicken soup
  • 2 celery stalks chopped
  • ½ onion diced
  • ½ cup sour cream
  • ¾ cup chicken stock
  • 1 teaspoon minced garlic
  • ¼ cup shredded Parmesan cheese
  • Salt and pepper to taste suggested: ½ teaspoon salt, ¼ teaspoon pepper

Instructions
 

  • Preheat the oven to 350°F. In a skillet, sauté the celery, onion, and garlic with salt and pepper until softened.
  • In a large bowl, mix the cooked chicken, cream of chicken soup, sour cream, and chicken stock. Stir in the sautéed vegetables, then gradually add the rice, ensuring it blends evenly.
  • Transfer the mixture to a greased 9x11-inch baking dish, spreading it evenly. Sprinkle shredded Parmesan cheese on top.
  • Bake for 30-40 minutes, or until golden brown. Let it rest for 5 minutes before serving.
