Chicken with Garlic Mushroom Sauce Recipe

Last week, I found myself staring at a fridge full of ingredients but with no clue what to cook. You know that feeling, right? And then, I remembered the recipe I’d tried a few months ago with chicken, garlic, and mushrooms. It wasn’t just good; it was unforgettable.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 3 cloves garlic minced (or 1 tablespoon)
  • 1 cup cremini mushrooms sliced
  • 1 cup chicken broth or vegetable broth for variation
  • 1 cup heavy cream substitute with coconut milk for a lighter choice
  • 1 teaspoon dried thyme fresh thyme also works great
  • 1/4 cup grated Parmesan cheese

Instructions
 

  • Season both sides of the chicken breasts with salt and pepper.
  • Heat olive oil in a large skillet over medium heat.
  • Add the chicken to the pan and cook for about 5 to 6 minutes on each side until golden brown and fully cooked. (Tip: The internal temperature should reach 165°F).
  • Remove the chicken from the skillet and set it aside on a plate while keeping it warm.
  • Using the same skillet, melt the butter over medium heat.
  • Add minced garlic and sauté for about 1 minute until fragrant.
  • Toss in the sliced mushrooms and cook, stirring occasionally, for 3 to 5 minutes. They should turn golden and tender.
  • Pour the chicken broth into the skillet, scraping any browned bits from the bottom (adds flavor!).
  • Stir in the heavy cream, dried thyme, and Parmesan cheese.
  • Allow the sauce to simmer for 5 to 7 minutes until it thickens slightly.
  • Return the cooked chicken to the skillet, spooning the garlic mushroom sauce over each piece.
  • Lower the heat and simmer for an additional 2 to 3 minutes to reheat the chicken and blend the flavors.

Notes

  • Season Each Layer: Add small amounts of salt and pepper at every stage for balanced flavors.
  • Don’t Skip the Parmesan: This cheese is key to adding richness and depth to the sauce.
  • Double the Sauce: If you’re a fan of extra creamy sauces, consider making 1.5x the sauce quantity for more servings.
  • Make it Spicy: Add a pinch of chili flakes or paprika if you enjoy a little kick!
