- 1 lime juiced
- 1 lb chicken breast or tofu cubed
- 1 cup black beans or pinto beans drained and rinsed
- 2 bell peppers sliced
- 1 red onion sliced
- 3 cloves garlic minced
- 1 avocado large
- ¼ cup sour cream
- ½ cup shredded cheddar cheese
- ½ cup salsa verde or pico de gallo
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- ½ teaspoon chili powder
- Salt and pepper to taste
Cook the Cilantro-Lime Rice: Rinse the rice and cook according to package instructions. Fluff with a fork, then mix in cilantro, lime juice, and a pinch of salt.
