- 2 tsp lime zest
- ¼ cup 59 ml fresh lime juice
- 3 tbsp olive oil
- 3 tbsp ChocZero honey or allulose honey
- 1 medium chipotle pepper in adobo
- 2 cloves garlic chopped
- ¾ tsp ground cumin
- 1 tsp kosher salt
- ½ tsp black pepper
- 6 large bone-in chicken thighs 1.13 kg
In a blender, combine lime zest, lime juice, olive oil, honey, chipotle pepper, garlic, cumin, salt, and black pepper. Blend until smooth.
Pat the chicken thighs dry and place them in a glass baking dish. Pour two-thirds of the marinade over the chicken, turning each piece to coat evenly. Marinate for 1 to 3 hours.
Preheat the grill, setting up one side for indirect heat.
Place the chicken skin-side down over direct heat. Grill for about 4 minutes, watching for flare-ups, until the skin is browned with grill marks.
Flip the thighs and grill over direct heat for another 4 minutes. Then, move them to the indirect heat side.
Brush the tops with the remaining marinade and continue cooking until the chicken reaches an internal temperature of 165ºF using an instant-read thermometer.
