This grilled chipotle-lime chicken is packed with smoky, tangy, and sweet flavors. The chicken thighs marinate in a blend of lime juice, honey, chipotle, and spices before hitting the grill for a perfect char. A final basting with the marinade enhances the bold flavors for a juicy, flavorful bite!

Ingredients
  

  • 2 tsp lime zest
  • ¼ cup 59 ml fresh lime juice
  • 3 tbsp olive oil
  • 3 tbsp ChocZero honey or allulose honey
  • 1 medium chipotle pepper in adobo
  • 2 cloves garlic chopped
  • ¾ tsp ground cumin
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 6 large bone-in chicken thighs 1.13 kg

Instructions
 

  • In a blender, combine lime zest, lime juice, olive oil, honey, chipotle pepper, garlic, cumin, salt, and black pepper. Blend until smooth.
  • Pat the chicken thighs dry and place them in a glass baking dish. Pour two-thirds of the marinade over the chicken, turning each piece to coat evenly. Marinate for 1 to 3 hours.
  • Preheat the grill, setting up one side for indirect heat.
  • Place the chicken skin-side down over direct heat. Grill for about 4 minutes, watching for flare-ups, until the skin is browned with grill marks.
  • Flip the thighs and grill over direct heat for another 4 minutes. Then, move them to the indirect heat side.
  • Brush the tops with the remaining marinade and continue cooking until the chicken reaches an internal temperature of 165ºF using an instant-read thermometer.
