This chopped cheese sandwich is a New York classic, featuring juicy seasoned beef, melted American cheese, and crisp lettuce and tomatoes on a toasted roll. It’s a quick, satisfying meal with bold flavors and a perfect balance of textures.

- 2 lbs ground beef 80/20 blend
- 1 white onion finely chopped
- 4 cloves garlic minced
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tbsp Worcestershire sauce
- 6 hoagie or bolillo rolls
- 12 slices American cheese
- 6 tbsp mayonnaise
- Shredded iceberg lettuce for serving
- Tomato slices for serving
Start by heating your skillet over medium heat. Add the ground beef and cook it slowly, breaking it into crumbles with your spoon. Allow the fat to render as the beef browns but stop cooking before it’s fully done. This step ensures juicy, flavorful meat.
Now, toss in your chopped onion and minced garlic. These ingredients should cook in the beef fat, adding richness to your filling. Stir continuously for about 4–5 minutes until the onions are soft and golden. Don’t forget to season with salt, pepper, and a drizzle of Worcestershire sauce.
Portion the beef mixture for one sandwich at a time. Add two slices of American cheese on top of the beef while it’s still hot on the skillet. Allow the cheese to melt and then use the edge of your metal spatula to “chop” everything together for that chopped cheese signature texture.
While the cheese is melting, slice your hoagie rolls in half and toast them in the skillet. A light spread of mayo on the cut sides makes them extra crispy and flavorful. Remove once golden brown and fragrant.
