Ingredients
  

  • 6 bone-in skin-on chicken thighs
  • 3 tablespoons olive oil divided
  • Zest and juice of 2 limes
  • 3 cloves garlic minced
  • 1 tablespoon honey
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped cilantro leaves

Instructions
 

Step 1: Prepare the Marinade 🥣

  • In a mixing bowl, whisk together 2 tablespoons of olive oil, lime juice, lime zest, cumin, chili powder, minced garlic, honey, salt, black pepper, and chopped cilantro. Alternatively, blend everything in a food processor until smooth.

Step 2: Marinate the Chicken 🍗

  • Place the chicken thighs in a shallow dish and pour the marinade over them. Toss to coat evenly. Cover and refrigerate for 30 minutes to 1 hour. Before cooking, let the chicken sit at room temperature for 10–15 minutes.

Step 3: Sear the Chicken 🔥

  • Preheat your oven to 425°F (220°C). Heat the remaining 1 tablespoon of olive oil in an ovenproof skillet over medium-high heat. Sear the chicken skin-side down for 5–6 minutes until golden brown. Flip and cook for another 2–3 minutes.

Step 4: Bake to Perfection 🕒

  • Transfer the skillet to the oven and bake for 15–20 minutes, or until the chicken reaches an internal temperature of 160°F (70°C).

Step 5: Garnish and Serve 🌿

  • Remove the skillet from the oven and let the chicken rest for 5 minutes. Garnish with fresh cilantro and lime slices before serving. Enjoy!
