Start with the base. Combine graham cracker crumbs, sugar, and melted butter in a bowl. Mix well until it resembles wet sand. Press the mixture into the bottom and sides of a 9-inch pie dish. Pop it into the refrigerator while you move on to the filling.
Take a deep breath because this part smells amazing! Whisk together coconut milk, whole milk, egg yolks, sugar, cornstarch, and salt in a medium saucepan. Cook it over medium heat while constantly stirring until it thickens and begins to bubble gently. Remove it from heat and stir in vanilla extract and toasted coconut. Pour this silky mixture into your chilled crust. Smooth it out, then refrigerate for at least 3 hours.
