These Country Gravy Breakfast Enchiladas are a hearty and flavorful way to start the day! Soft tortillas are stuffed with scrambled eggs, crispy tater tots, sausage, and cheese, then smothered in rich, creamy country gravy. Ingredients
  

  • 1 lb ground breakfast sausage
  • ½ cup diced onion
  • 1 jalapeño minced
  • cup all-purpose flour
  • 2 ¾ cups milk
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 10 large eggs
  • 2 tablespoons butter
  • 2 cups cooked tater tots
  • 1 cup shredded Pepper Jack cheese
  • 1 cup shredded cheddar cheese
  • 10 fajita-size flour tortillas

Instructions
 

  • Heat a large nonstick pan over medium-high heat and add the sausage, breaking it apart as it cooks.
  • When it's about halfway done, stir in the diced onion and minced jalapeño.
  • Use a slotted spoon to remove 1 cup of the sausage mixture and set it aside.
  • Return the pan to the heat and sprinkle the flour over the remaining sausage mixture. Stir continuously for 1 minute.
  • Gradually whisk in the milk and let it simmer until thickened, then remove from heat.
  • Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish.
  • Whisk the eggs with a pinch of salt. Melt butter in a nonstick pan and scramble the eggs, stopping while they are slightly undercooked as they will finish in the oven.
  • In a medium bowl, mix the reserved sausage mixture with the tater tots, scrambled eggs, and half of the Pepper Jack and cheddar cheese.
  • Spoon about ½ cup of the filling onto each tortilla, roll them up, and place them seam-side down in the prepared baking dish.
  • Pour the sausage gravy over the top and sprinkle with the remaining cheese.
  • Bake for 30–40 minutes until bubbly and golden. Enjoy!
