Ingredients
  

  • 4 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 4 oz cream cheese softened
  • ½ cup shredded cheddar cheese
  • 4 slices bacon cooked and crumbled
  • 1 cup crushed Doritos
  • 2 eggs beaten
  • 1 tbsp olive oil

Instructions
 

  • Preheat the oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
  • Using a sharp knife, butterfly each chicken breast to create a pocket, being careful not to cut all the way through.
  • Season the inside of each chicken breast with salt and pepper.
  • In a bowl, mix the softened cream cheese, shredded cheddar cheese, and crumbled bacon until well combined.
  • Stuff each chicken breast with the cheese mixture, then press the edges together to seal.
  • Dip each stuffed chicken breast into the beaten eggs, ensuring it's fully coated.
  • Roll the chicken in the crushed Doritos, pressing gently so the coating sticks.
  • Arrange the coated chicken breasts in the prepared baking dish.
  • Bake for 25-30 minutes, or until the chicken is fully cooked and the crust is crispy and golden.
