  • 2 boneless skinless chicken breasts, diced into bite-sized pieces (substitute with shrimp or tofu for a twist).
  • 3 cups penne pasta or use whole wheat for a healthier option.
  • 2 tablespoons Cajun seasoning adjust for spice level.
  • 1 teaspoon smoked paprika.
  • 2 tablespoons olive oil for cooking.
  • 1 cup heavy cream swap with half-and-half for fewer calories.
  • 1 cup chicken broth vegetable broth also works.
  • ½ cup grated Parmesan cheese for creamy texture and bold flavor.
  • 1 red bell pepper sliced thinly for sweetness.
  • 1 green bell pepper or zucchini for extra veggies.
  • ½ cup chopped onion for depth.
  • 3 cloves garlic minced.
  • Optional garnish: parsley and a lemon wedge for freshness.

Instructions
 

  • Start by rubbing Cajun seasoning and smoked paprika generously over the diced chicken breast. This step ensures all the bold flavors seep into the meat.
  • Heat olive oil in a large skillet over medium heat. Once the oil is hot, add the seasoned chicken and cook for 5-6 minutes, stirring occasionally. Ensure the chicken is golden brown on the outside and fully cooked on the inside. Remove and set aside.
  • Using the same skillet, toss in the bell peppers, onions, and garlic. Cook for 3-4 minutes until they soften and become fragrant.
  • Reduce the heat to low and pour in the chicken broth, scraping up any browned bits at the bottom of the pan (they add extra flavor!). Gradually stir in the heavy cream and Parmesan cheese. Simmer for 4-5 minutes until the sauce thickens slightly.
  • While the sauce simmers, boil your pasta according to the package instructions. Drain and save about ½ cup of the pasta water, which can be added to the sauce if it’s too thick.
  • Add the cooked chicken back into the skillet. Toss in the drained pasta and mix until everything is evenly coated in the creamy Cajun sauce. If needed, add a splash of the reserved pasta water to loosen the mixture.
  • Once plated, sprinkle chopped parsley over the dish and finish with a squeeze of lemon juice for a tangy kick.
