Ingredients
  

  • 1 tablespoon oil
  • 1 pound boneless skinless chicken breasts or thighs
  • 1 teaspoon Cajun seasoning
  • 1 tablespoon butter
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 cup diced bell pepper
  • 4 cloves garlic chopped
  • 1 teaspoon fresh thyme chopped
  • 1 tablespoon Cajun seasoning

Broth & Pasta:

  • 6 cups chicken broth
  • 1 14.5-ounce can diced tomatoes (optional)
  • 1 tablespoon Worcestershire sauce use gluten-free if needed
  • 8 ounces pasta ditalini, shells, or gluten-free alternative

Creamy & Finishing Touches:

  • ½ cup heavy cream optional
  • cup grated Parmesan cheese Parmigiano-Reggiano
  • 1 tablespoon lemon juice optional
  • 2 tablespoons chopped fresh parsley optional
  • 2 green onions thinly sliced (optional)
  • Cayenne salt, and pepper to taste

Instructions
 

  • Sear the Chicken: Heat oil in a large saucepan over medium-high heat. Season the chicken with Cajun seasoning and cook for 2-4 minutes per side until golden brown. Remove and set aside.
  • Sauté the Vegetables: Melt butter in the same pan. Add diced onion, celery, and bell pepper, cooking for 5-7 minutes until softened.
  • Enhance the Flavor: Stir in garlic, thyme, and additional Cajun seasoning. Cook for 1 minute until fragrant.
  • Simmer the Soup: Pour in the broth, return the chicken to the pot, and add diced tomatoes, Worcestershire sauce, and pasta. Bring to a boil, then reduce heat and simmer until the pasta is al dente (about 7 minutes).
  • Shred the Chicken & Add Creamy Elements: Remove the chicken, shred or slice it, and stir it back into the pot. Turn off the heat, then mix in the heavy cream and Parmesan, allowing the cheese to melt into the broth.
  • Finish & Serve: Stir in lemon juice, parsley, and green onions. Season with cayenne, salt, and pepper to taste. Serve warm and enjoy!
