When I first made this Creamy Sun-Dried Tomato Chicken Pasta, I was blown away by how something so simple could taste so extraordinary. The tender chicken, the velvety sauce, and those tangy little bursts of sunshine from the sun-dried tomatoes made it feel like I was dining at a fancy Italian bistro from the comfort of my kitchen.

Ingredients
  

  • 2 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 8 ounces about 225g fettuccine pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes packed in oil, drained and chopped
  • 2 cloves garlic minced
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves optional, for garnish

Instructions
 

  • Start by seasoning the chicken breasts with salt and pepper. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the chicken for about 6–7 minutes on each side until golden and fully cooked. Remove the chicken from the skillet and set it aside to rest so the juices settle, keeping it tender.
  • Using the same skillet, add the remaining 1 tablespoon of olive oil and sauté the minced garlic until fragrant, about 1 minute. Pour in the chicken broth, heavy cream, dried basil, and oregano. Stir everything together and bring it to a gentle simmer to create a luscious base for your pasta.
  • Add the uncooked fettuccine pasta to the skillet. Stir occasionally to ensure it cooks evenly, allowing the flavors of the sauce to infuse the pasta. This step takes about 10–12 minutes, during which the sauce thickens beautifully. 🥄
  • Stir in the grated Parmesan cheese and the chopped sun-dried tomatoes, adding a burst of tangy flavor and texture to the sauce. Slice the rested chicken breasts into thin strips, fold them back into the skillet, and allow everything to simmer together for 2–3 minutes. 🍴
  • Plate up your creamy pasta and garnish with fresh basil leaves for a delightful touch of green. Sprinkle on some extra Parmesan if you like, and serve the dish steaming hot. Prepare for compliments with every bite! 🤗

Notes

  • Don’t Overcook the Chicken: Keep the meat tender by cooking it just until it’s done, and then letting it rest.
