- 2 cups Medjool dates pitted
- 1 cup almond flour or oat flour
- 1 tablespoon coconut oil
- ½ cup natural peanut butter or any nut butter of your choice
- 2 tablespoons maple syrup or honey
- ½ cup crushed peanuts optional for extra crunch
- 1 cup dark chocolate chips or dairy-free chocolate chips
- 1 teaspoon coconut oil
Add the pitted dates to a food processor and blend until smooth.
Add almond flour and coconut oil to the date paste, and pulse until the mixture forms a dough-like consistency.
Press the mixture evenly into a parchment-lined baking dish to form the base layer. Set aside.
Mix the peanut butter and maple syrup in a bowl until smooth.
Spread the peanut butter mixture over the date base evenly using a spatula.
Sprinkle the crushed peanuts on top for added texture and crunch.
Melt the chocolate chips and coconut oil in a double boiler or microwave until fully smooth.
Pour the melted chocolate over the peanut butter layer, and spread evenly.
Tap the dish lightly on the counter to remove air bubbles.
Place the completed layers in the freezer for at least one hour to set.
Once firm, remove from the baking dish and use a sharp knife to slice into bars.
