Banana Cobbler is a warm, comforting dessert that combines sweet, caramelized bananas with a buttery, golden-brown topping. Similar to a traditional fruit cobbler, it features a soft, gooey filling balanced by a crisp, biscuit-like crust. Perfect with a scoop of vanilla ice cream or a drizzle of caramel, this easy-to-make treat is a delightful twist on classic cobblers, bringing rich banana flavor to every bite.

Ingredients
  

For the Topping:

  • ¾ cup packed light brown sugar
  • ½ cup self-rising flour
  • ½ cup 1 stick unsalted butter, softened
  • 1 cup uncooked old-fashioned oats
  • ½ cup chopped pecans

For the Filling:

  • 1 cup self-rising flour
  • 1 cup sugar
  • 1 cup milk
  • 2 teaspoons banana extract optional
  • ½ cup 1 stick melted butter
  • 4 ripe bananas sliced

Instructions
 

  • Preheat your oven to 375°F and lightly coat a 2-quart (or 9×9-inch) baking dish with nonstick cooking spray.
  • Make the Streusel: In a bowl, use a fork to mix together the brown sugar, flour, and butter until crumbly. Stir in the oats and pecans, then set aside.
  • Make the Filling: In a medium bowl, whisk the flour, sugar, and milk until just combined. Add the melted butter and whisk again. Pour the batter into the prepared baking dish.
  • Assemble & Bake: Evenly layer the banana slices over the batter. Sprinkle the streusel topping over the bananas. Bake for 45-50 minutes, or until golden brown and set.
  • Serve & Enjoy: Dig in while warm! For an extra treat, serve with a scoop of vanilla ice cream and fresh banana slices.

Notes

This recipe originally used banana milk, which is no longer available, so I’ve updated it with regular milk. A banana protein drink works well too, or add a teaspoon of banana extract for extra flavor. For the best taste, use ripe bananas with brown spots!
