English Muffin Breakfast Pizza Recipe

When I first made English Muffin Breakfast Pizzas, I couldn’t believe how simple and flavorful they were! These mini pizzas are a lifesaver during busy mornings, giving you a satisfying and fun breakfast without the hassle.

Ingredients
  

  • English muffins 6, split in half
  • Cooking spray to coat baking sheet
  • Breakfast sausage 8 ounces
  • Yellow onion ½ cup, chopped
  • Green bell pepper ½ cup, chopped
  • Button mushrooms ½ cup, chopped
  • Eggs 8 large, beaten
  • Kosher salt ½ teaspoon
  • Ground black pepper ¼ teaspoon
  • Mozzarella cheese 1½ cups, shredded

Instructions
 

  • Split the English muffins in half and place them on a baking sheet. Preheat your broiler and position the rack about 6 inches below the heat. This step will prep the base for your toppings and give it a crispy texture.
  • Heat a skillet over medium-high heat and spray it with cooking spray. Add the breakfast sausage, onion, bell pepper, and mushrooms, breaking up the sausage as it cooks. Stir occasionally for about 5 minutes until the sausage is browned and the veggies are soft. Drain off any excess grease and set the mixture aside.
  • Reduce the skillet heat to medium and pour in the beaten eggs. Season with salt and pepper. Gently stir as the eggs cook slowly until set but still soft. Remove from heat, keeping the eggs warm for assembly.
  • Toast the English muffins under the broiler for 2 minutes, just until lightly golden. Layer each muffin half with sausage and veggie mix, followed by the scrambled eggs. Top generously with shredded mozzarella cheese to tie it all together.
  • Return the baking sheet to the broiler for another 2-3 minutes, watching closely until the cheese is melted and bubbly. This step gives the perfect finishing touch with beautifully melted cheese.
  • Serve the pizzas immediately while they’re hot and cheesy. Add hot sauce or fresh herbs to elevate the flavors even more. Every bite is a perfect mix of crispy muffin, creamy eggs, savory sausage, and gooey cheese!
