Ingredients
  

  • For the Beef:
  • 3 to 4 pounds chuck roast trim excess fat
  • 2 cups beef broth
  • 1 cup water
  • 1/4 cup soy sauce
  • 1 teaspoon Worcestershire sauce
  • 4 garlic cloves minced
  • 1 onion thinly sliced
  • 2 teaspoons dried thyme
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • For the Sandwiches:
  • 6 hoagie rolls or crusty bread
  • Provolone or Swiss cheese slices optional
  • Fresh parsley optional garnish

Instructions
 

  • Prepare the Beef: Season chuck roast with salt and pepper. Sear in a skillet over medium-high heat until browned.
  • Assemble Ingredients: Place beef in slow cooker, add broth, water, soy sauce, Worcestershire sauce, garlic, onion, thyme, and pepper. Cook on low for 6 hours or high for 4 hours.
  • Shred the Beef: Remove beef from slow cooker, shred with forks, and return to soak in the juices.
  • Prepare Au Jus: Remove 1-2 cups of cooking liquid, skim fat, and simmer in a saucepan for 5 minutes to enhance flavor.
  • Assemble Sandwiches: Toast hoagie rolls, fill with shredded beef, top with cheese, and broil for 2 minutes.
  • Serve: Serve hot with au jus sauce for dipping, garnished with parsley if desired.
