- For the Beef:
- 3 to 4 pounds chuck roast trim excess fat
- 2 cups beef broth
- 1 cup water
- 1/4 cup soy sauce
- 1 teaspoon Worcestershire sauce
- 4 garlic cloves minced
- 1 onion thinly sliced
- 2 teaspoons dried thyme
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- For the Sandwiches:
- 6 hoagie rolls or crusty bread
- Provolone or Swiss cheese slices optional
- Fresh parsley optional garnish
Prepare the Beef: Season chuck roast with salt and pepper. Sear in a skillet over medium-high heat until browned.
Assemble Ingredients: Place beef in slow cooker, add broth, water, soy sauce, Worcestershire sauce, garlic, onion, thyme, and pepper. Cook on low for 6 hours or high for 4 hours.
Shred the Beef: Remove beef from slow cooker, shred with forks, and return to soak in the juices.
Prepare Au Jus: Remove 1-2 cups of cooking liquid, skim fat, and simmer in a saucepan for 5 minutes to enhance flavor.
Assemble Sandwiches: Toast hoagie rolls, fill with shredded beef, top with cheese, and broil for 2 minutes.
