I recently made this garlic tomato chicken with mozzarella, and I have to tell you, it was an absolute hit at my dinner table. The way the juicy chicken pairs with the rich tomato sauce and gooey mozzarella is simply heavenly.

- 4 boneless skinless chicken breasts (about 1.5 to 2 pounds total)
- 2 tablespoons olive oil
- 4 garlic cloves minced
- 1 can of diced tomatoes 14 ounces
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon salt adjust to taste
- ½ teaspoon black pepper
- 1 cup shredded mozzarella cheese
- Fresh basil leaves optional, for garnish
Start by seasoning your chicken breasts generously with salt and black pepper on both sides. This simple step lays the foundation for bold, delicious flavors.
Heat some olive oil in a large skillet over medium-high heat. Place the chicken into the skillet and sear them for about 4-5 minutes on each side. They should have a golden-brown crust and be cooked through. Once done, transfer them to a plate temporarily.
Using the same skillet (don’t wash it, those chicken bits add flavor!), sauté your minced garlic until it’s fragrant. Then pour in your canned diced tomatoes along with the dried basil and oregano. Stir well and allow the sauce to simmer for 5-7 minutes. It should thicken slightly but remain saucy.
Nestle the seared chicken back into the skillet, ensuring each piece gets coated with the sauce. Simmer everything together for another 2-3 minutes to meld the flavors.
Evenly sprinkle the shredded mozzarella over each chicken breast. Cover the skillet with a lid and cook for another 2-3 minutes, or until the cheese is melted, gooey, and bubbly.
If desired, top your dish with fresh basil leaves for that pop of color and added freshness. Serve the dish hot and watch it disappear!
