Grilled Chicken Caprese Recipe
Rebecca
The first time I made grilled chicken caprese, I couldn’t believe how something so simple could taste so amazing. The smoky, juicy chicken pairs perfectly with the fresh mozzarella, juicy tomatoes, and vibrant basil.

- Chicken breasts
- Italian seasoning
- Garlic powder
- Onion powder
- Mozzarella cheese
- Tomatoes
- Fresh basil
- Balsamic vinegar
- Light brown sugar
Start by preheating your grill to medium-high heat. While the grill is heating, season the chicken breasts on both sides with Italian seasoning, garlic powder, onion powder, and a pinch of salt and pepper. These spices will infuse the chicken with mouthwatering flavor right from the start.
Spray the grill with non-stick spray and place the chicken breasts on it. Cook each side for 6-7 minutes, or until the internal temperature reaches 165°F. This ensures your chicken is perfectly cooked, juicy, and tender.
Once the chicken is almost done, top each piece with a generous slice of fresh mozzarella. Close the grill lid and allow the cheese to melt for 2-3 minutes. This step gives the dish its signature creamy, cheesy goodness.
While the chicken is grilling, combine balsamic vinegar and brown sugar in a small saucepan. Simmer on low heat, stirring occasionally, until the mixture reduces by half and thickens into a glaze. It’s worth the small effort for the sweet and tangy topping. 🍯
Remove the chicken from the grill and top each piece with a slice of tomato and fresh basil leaves. Drizzle the balsamic reduction generously over each serving for the ultimate flavor combo. Serve immediately and enjoy!
- Watch the Grill Temperature: Medium-high heat is ideal for grilling chicken breasts. Too high, and the outside may burn before the inside is fully cooked.
- Rest the Chicken Before Serving: Allow the cooked chicken to rest for 5 minutes after removing it from the grill. This helps lock in the juices and keeps the meat moist.
- Make Extra Balsamic Reduction: Double the amount of balsamic glaze so you have leftovers. It’s amazing drizzled over salads, roasted vegetables, or even strawberries!
- Don’t Skip the Fresh Basil: Fresh basil adds a classic herbal kick to the dish. Avoid dried basil, as it doesn’t provide the same vibrant flavor.
