Ingredients
  

  • 4 boneless skinless chicken breasts (about 6 ounces each)
  • 2 tbsp olive oil
  • 3 garlic cloves minced
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 2 large ripe tomatoes diced
  • 4 oz fresh mozzarella cheese sliced
  • 1 bunch fresh basil leaves
  • 1 tsp fresh thyme optional

Instructions
 

  • Marinate the chicken by mixing olive oil, garlic, salt, and pepper in a bowl. Coat the chicken evenly and refrigerate for at least 15 minutes.
  • Prepare the Margherita sauce by sautéing garlic in olive oil in a saucepan. Add diced tomatoes, salt, and cook for 5 minutes. Stir in chopped basil and set aside.
  • Grill the marinated chicken breasts over medium heat for about 5-6 minutes per side, until cooked through (internal temperature of 165°F).
  • Spoon the Margherita sauce over each chicken breast, then layer with mozzarella slices. Close the grill lid and cook until the cheese starts to melt, about 2 minutes.
  • Garnish with fresh basil and serve immediately.
