Ingredients
  

  • Marinade/Dressing:
  • 3 tablespoons olive oil
  • 100 ml freshly squeezed lime juice
  • 2 tablespoons chopped cilantro
  • 2 crushed garlic cloves
  • 1 teaspoon brown sugar
  • ¾ teaspoon red chili flakes adjust to spice preference
  • ½ teaspoon ground cumin and 1 teaspoon salt.
  • Salad:
  • 4 boneless
  • skinless chicken thigh fillets
  • ½ yellow bell pepper sliced
  • ½ red bell pepper sliced
  • ½ onion sliced
  • 5 cups Romaine or cos lettuce washed and dried
  • 2 avocados sliced
  • 1 pinch extra cilantro for garnish
  • 1 pinch optional sour cream for serving.

Instructions
 

  • Whisk the marinade ingredients until well combined.
  • Pour half into a shallow dish and marinate the chicken for up to two hours if time allows. Refrigerate the remaining marinade for dressing.
  • Heat 1 teaspoon of oil in a grill pan or skillet over medium-high heat.
  • Grill the chicken on each side until golden, crispy, and cooked through, working in batches to avoid excess moisture. Set aside to rest.
  • Wipe the pan with a paper towel, add another teaspoon of oil, and sauté the bell peppers and onion until tender.
  • Slice the chicken into strips and assemble the salad with lettuce, avocado, peppers, onion, and chicken.
  • Drizzle with the reserved marinade as a dressing and serve with optional cilantro and sour cream.

  • Marinate Longer: For maximum flavor, marinate the chicken overnight if possible.
