- Marinade/Dressing:
- 3 tablespoons olive oil
- 100 ml freshly squeezed lime juice
- 2 tablespoons chopped cilantro
- 2 crushed garlic cloves
- 1 teaspoon brown sugar
- ¾ teaspoon red chili flakes adjust to spice preference
- ½ teaspoon ground cumin and 1 teaspoon salt.
- Salad:
- 4 boneless
- skinless chicken thigh fillets
- ½ yellow bell pepper sliced
- ½ red bell pepper sliced
- ½ onion sliced
- 5 cups Romaine or cos lettuce washed and dried
- 2 avocados sliced
- 1 pinch extra cilantro for garnish
- 1 pinch optional sour cream for serving.
Whisk the marinade ingredients until well combined.
Pour half into a shallow dish and marinate the chicken for up to two hours if time allows. Refrigerate the remaining marinade for dressing.
Heat 1 teaspoon of oil in a grill pan or skillet over medium-high heat.
Grill the chicken on each side until golden, crispy, and cooked through, working in batches to avoid excess moisture. Set aside to rest.
Wipe the pan with a paper towel, add another teaspoon of oil, and sauté the bell peppers and onion until tender.
Slice the chicken into strips and assemble the salad with lettuce, avocado, peppers, onion, and chicken.
Drizzle with the reserved marinade as a dressing and serve with optional cilantro and sour cream.
