Grilled Chili Lime Chicken Thighs Recipe

I recently tried this grilled chili lime chicken thighs recipe, and I can’t stop raving about it! The chicken comes out so tender and juicy, with a smoky char from the grill and flavors that burst on your taste buds. The zing of lime combined with the warmth of chili and paprika really hits the spot.

Ingredients
  

  • 4 boneless skinless chicken thighs
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • Zest and juice of 2 limes
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Instructions
 

  • Start by combining minced garlic, olive oil, lime zest, lime juice, chili powder, paprika, salt, and pepper in a bowl. Whisk until everything is well-blended. This zesty marinade is the secret to bold flavor!
  • Place the chicken thighs in a resealable bag or shallow dish. Pour the marinade over the chicken, making sure everything is evenly coated. Pop it into the fridge for at least 30 minutes (or up to 4 hours if you have the time).
  • Preheat your grill to medium-high heat (approximately 375–400°F). Give it about 10 minutes to reach the right temperature. While it’s heating up, remove the chicken from the fridge to take off the chill.
  • Remove the chicken from the marinade and place it directly on the grill grates. Cook for 6–8 minutes per side, or until the internal temperature hits 165°F. Flip carefully to get that gorgeous char without tearing the meat.
  • Once off the grill, give the chicken a few minutes to rest. This locks in the juices for extra tenderness. Garnish with fresh cilantro and lime wedges before serving.

Notes

  • Marinate Longer for Flavor: If you have the time, marinate the chicken thighs for the full 4 hours. It makes a noticeable difference in flavor absorption.
  • Use Fresh Lime Juice: Skip the bottled stuff! Fresh lime juice delivers a more vibrant, tangy taste.
  • Don’t Skip the Resting Step: Resting the chicken post-grilling allows the juices to redistribute, making every bite tender and juicy.
  • Watch Those Flames: While a smoky char is delicious, excessive flare-ups can burn the chicken. Keep the grill lid closed when possible.
