I recently whipped up this Honey Bourbon Steak Marinade recipe, and I must say, it was a total hit! The tender, flavorful steak tips grilled to perfection were irresistible. The hint of bourbon mixed with honey's sweetness and the kick of sriracha created a taste explosion that my family couldn’t get enough of.

- 2 ½ to 3 lbs sirloin steak tips
- 4 tablespoons Worcestershire sauce
- 3 ½ tablespoons honey
- 3 tablespoons bourbon
- 3 tablespoons soy sauce
- 2 tablespoons sriracha
- 4 garlic cloves minced
- ¼ teaspoon marjoram optional
- ½ teaspoon salt
- ½ teaspoon cracked black pepper
Start by grabbing a mixing bowl. Combine Worcestershire sauce, honey, bourbon, soy sauce, sriracha, and minced garlic in the bowl. Add the marjoram (if using), along with salt and black pepper. Use a whisk to mix everything until the marinade is smooth and well blended.
Take your sirloin steak tips and place them in a large plastic bag or a shallow baking dish. Pour the marinade over the steak, ensuring each piece is coated evenly. Seal the bag or cover the dish with plastic wrap. Pop it in the fridge, and allow the steak to marinate for at least 4 hours. The longer it marinates, the deeper the flavors will infuse into the meat.
Preheat your grill to medium-high heat. While waiting for the grill to heat up, take the marinated steak out of the fridge. Allow it to sit at room temperature for about 10 minutes, so it grills evenly.
Once the grill is ready, place the steak tips directly onto the hot grates. Cook them for about 4-5 minutes per side, depending on the size of the steak tips and how well-done you prefer your steak. Flip them gently with tongs to avoid losing the marinade crust.
After grilling, remove the steak tips and allow them to rest for 5 minutes. This step is crucial as it helps retain the meat’s juices.
- Don’t skimp on marinating: The longer you marinate, the better the flavor. I recommend at least 4 hours, but overnight is ideal.
- Use fresh garlic: Freshly minced garlic packs a much better punch than pre-minced.
- Don’t overcook: To keep the steak moist and tender, aim for medium-rare to medium doneness.
- Clean the grill grates: A clean grill prevents sticking and helps the steak cook evenly.
- Taste and tweak the marinade: Adjust the honey, bourbon, or sriracha quantities to suit your preferred balance of sweetness and heat.
