Ingredients

  • Fresh yellow peaches
  • Blackberries
  • Blueberries
  • Pomegranate seeds
  • Fresh basil leaves
  • Lime juice
  • Honey

Instructions

  • Start by washing the peaches, berries, and basil leaves thoroughly. Cut the peaches into thin slices, ensuring they’re not too ripe to maintain their firmness. Remove the seeds from a fresh pomegranate if using.
  • Add the peach slices, blackberries, blueberries, and pomegranate seeds to a large mixing bowl. The variety of colors and textures will already have you excited for the final result.
  • Drizzle the honey over the fruit, then squeeze in the fresh lime juice. Toss everything gently to coat the fruit evenly without squishing it.
  • Chop the fresh basil leaves into thin ribbons and sprinkle them over the salad for a burst of herbaceous flavor. Give it one final toss, and your salad is ready to serve.

Notes

  • Choose Firm Fruit: Soft or overly ripe fruit can turn mushy and affect the texture of the salad. Pick peaches and berries with a slight firmness.
  • Balance the Flavors: Add lime juice and honey gradually, tasting as you go to ensure the perfect balance of sweet and tangy.
  • Prep Just Before Serving: While you can prep some components in advance, it’s best to assemble the salad shortly before serving for optimal freshness.
  • Cut Basil at the Last Minute: Basil can brown quickly, so slice it just before adding it to the salad for the freshest look and taste.
