Ingredients

  • 1 cup unsalted butter softened
  • 1 ¼ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract pure for best flavor
  • 1 ¼ cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup mini marshmallows
  • ½ cup chocolate chips milk, semi-sweet, or dark, depending on your preference
  • ½ cup crushed peppermint candies optional
  • ¼ cup hot chocolate mix for extra oomph

Instructions

  • Preheat your oven to 350°F (175°C). Line your baking pan with parchment paper, leaving extra paper to lift the bars easily later.
  • Using an electric mixer, beat the butter and sugar together until light and fluffy. This step creates the perfect soft texture for the bars.
  • Add eggs one at a time, beating well after each addition. Mix in the vanilla extract for that rich warm aroma.
  • In another bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt. Slowly add the dry ingredients to the wet mixture, blending until a smooth batter forms.
  • Pour the batter into your prepared pan, spreading it evenly with a spatula. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • While the bars are still warm, sprinkle mini marshmallows, chocolate chips, and any other toppings over the surface. Use the warmth of the bars to melt the chocolate and marshmallows slightly.
  • Let the bars cool completely in the pan before using the parchment paper to lift them out. Slice into squares or rectangles and serve.
