I have to admit, this Italian Sausage Tortellini Soup has quickly become a favorite in my kitchen. The first time I made it, the blend of hearty Italian sausage, tender tortellini, and fresh vegetables blew me away.

Begin by heating olive oil in your large pot over medium-high heat. Remove the casings from the Italian sausage and crumble it into the pot. Cook it until itβs browned and no longer pink, which should take about 5-7 minutes. π©βπ³ Stir frequently to break it apart and ensure even cooking!
