The moment I whipped up this Loaded Potato and Meatloaf Casserole for my family, I knew it was a keeper. It’s warm, hearty, and packed with flavor that hits all the comforting notes. Ingredients
  

  • 1.5 pounds of lean ground beef or turkey
  • ½ cup finely chopped white onion
  • 1 tablespoon minced garlic
  • 1 cup seasoned breadcrumbs
  • 1 tablespoon Worcestershire sauce
  • 1 large egg lightly beaten
  • cup cottage cheese
  • ½ cup BBQ sauce
  • 2 pounds Russet or Yukon gold potatoes peeled and diced
  • ½ cup unsalted butter
  • ½ cup sour cream
  • ½ cup warm milk or half-and-half
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 6 slices thick-cut bacon cooked and crumbled
  • cups shredded cheddar cheese

Instructions
 

  • Preheat your oven to 375°F and lightly grease a 9x13-inch baking dish with cooking spray or butter. This step ensures an easy cleanup later!
  • Using a large mixing bowl, combine the ground meat, onion, garlic, breadcrumbs, Worcestershire sauce, egg, cottage cheese, and BBQ sauce. Gently mix everything together without overhandling the meat (to keep it tender). Spread this mixture evenly in your prepared baking dish, pressing lightly to form an even layer.
  • Place the meatloaf into the oven and bake for 30 minutes. This initial bake allows the meat to cook through slightly before adding the toppings.
  • While the meatloaf bakes, prepare the potatoes. Place the peeled and diced potatoes in a medium saucepan and cover them with water. Bring to a boil over medium heat, cooking for 15–20 minutes or until the potatoes are tender. Drain the water, then mash the potatoes with butter until smooth. Stir in sour cream, warm milk, salt, and pepper, and mix until the potatoes are creamy. Fold in half of the shredded cheddar.
  • Once the meatloaf has baked for 30 minutes, carefully remove it from the oven and drain off any excess grease. Spread the warm mashed potatoes evenly over the meatloaf, smoothing the top with a spatula. Sprinkle the remaining shredded cheddar and crumbled bacon evenly over the mashed potatoes.
  • Return the baking dish to the oven and bake for an additional 15–20 minutes, or until the cheese is melted and bubbling.
  • Once done, remove the dish from the oven. Allow it to cool for a few minutes before serving. One bite, and you’ll understand why this recipe is a classic!
