  • 2 pounds of white fish fillets such as cod or halibut

  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 1 cup cherry tomatoes halved
  • 1/2 cup black olives pitted and sliced
  • 1/2 cup red onion thinly sliced
  • 1 lemon sliced
  • 1/4 cup fresh parsley chopped
  • 1/2 teaspoon red pepper flakes optional for heat

Instructions
 

  • Start by preheating your oven to 375°F (190°C). This ensures the fish cooks evenly and retains its moisture.
  • Pat the fish fillets dry with a paper towel. This helps the seasonings stick better. Lightly rub each fillet with olive oil, ensuring even coverage.
  • In a small bowl, mix the minced garlic, oregano, thyme, paprika, salt, and black pepper. Sprinkle this mixture evenly over the fillets, gently pressing it into the fish.
