Ingredients
  

  • 1 pound ground chicken
  • ½ cup panko breadcrumbs
  • 1 large egg
  • ½ cup crumbled feta cheese
  • ¼ cup finely diced red onions
  • ¼ cup finely diced sun-dried tomatoes
  • ¼ teaspoon dried dill
  • ¼ teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • 2 tablespoons olive oil
  • 1 tablespoon fresh mint optional, for garnish
  • 1 batch Tzatziki sauce

Instructions
 

  • Preheat the oven to 400°F.
  • In a large bowl, mix all the ingredients thoroughly using your hands.
  • Roll the mixture into 15 golf ball-sized meatballs and arrange them in 5 rows of 3 on a parchment-lined baking sheet.
  • Bake for 25-30 minutes or until fully cooked.
  • Let the meatballs rest for 2 minutes, then garnish with optional fresh mint and serve with tzatziki for dipping.
