- 1 pound ground chicken
- ½ cup panko breadcrumbs
- 1 large egg
- ½ cup crumbled feta cheese
- ¼ cup finely diced red onions
- ¼ cup finely diced sun-dried tomatoes
- ¼ teaspoon dried dill
- ¼ teaspoon dried oregano
- ½ teaspoon garlic powder
- ½ teaspoon salt
- 2 tablespoons olive oil
- 1 tablespoon fresh mint optional, for garnish
- 1 batch Tzatziki sauce
Preheat the oven to 400°F.
In a large bowl, mix all the ingredients thoroughly using your hands.
Roll the mixture into 15 golf ball-sized meatballs and arrange them in 5 rows of 3 on a parchment-lined baking sheet.
Bake for 25-30 minutes or until fully cooked.
Let the meatballs rest for 2 minutes, then garnish with optional fresh mint and serve with tzatziki for dipping.
