I have to tell you about this chicken recipe that changed the way I think about dinners. Last week, I was so bored of my usual chicken dishes, and a friend of mine insisted I give this "Melt in Your Mouth Chicken" recipe a shot.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup mayonnaise
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and black pepper
  • Optional pinch of red pepper flakes for those who like a bit of heat.

Instructions
 

  • First, preheat your oven to 375°F (190°C).
  • While the oven heats up, lightly grease your baking dish with cooking spray or a touch of olive oil.
  • Trim any excess fat from your chicken breasts and pat them dry with paper towels.
  • Take a mixing bowl and combine the mayonnaise, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Mix everything together until smooth and creamy.
  • Place your chicken breasts into the greased baking dish in a single layer.
  • Spread the creamy mayo mixture over each chicken breast, making sure they’re evenly coated.
  • Pop the baking dish into your preheated oven and bake for 45 minutes.
  • Use a meat thermometer to ensure the chicken has reached an internal temperature of 165°F (74°C).
  • If you’d like the topping slightly crispy, turn on the broiler for the last 2 minutes.
  • Once the chicken is done, remove it from the oven and let it rest for about 5 minutes. This helps the juices redistribute, keeping the chicken tender and moist.

Notes

  • Achieving Perfect Texture: Marinate the chicken in a little buttermilk for 30 minutes before cooking for extra tenderness.
  • Healthier Alternative: Use Greek yogurt instead of mayo to cut down on calories while maintaining creaminess.
  • Extra Flavor: Add a teaspoon of Dijon mustard to the mayo mixture for a subtle tang.
  • Customizable Spice Level: Adjust the paprika and red pepper flakes based on your preference.
