There’s nothing cozier than indulging in a warm bowl of creamy soup on a chilly day, and this Potato Cheese Soup with Smoky Chipotle does the trick every time! The first time I made it, I couldn’t stop marveling at the rich, velvety texture with just the right kick of spicy, smoky heat.

Ingredients
  

  • 2 lbs russet potatoes
  • 1 medium red onion chopped
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 4 cups bone broth or vegetable stock
  • 1 cup milk
  • 2 chipotle peppers in adobo sauce chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 ½ cups sharp cheddar cheese grated
  • Salt and pepper to taste

Instructions
 

  • Peel and chop the russet potatoes, then add them to a large pot filled with salted water. Bring it to a boil and cook until fork-tender, about 20 minutes. Drain the water and set the potatoes aside.
  • Heat olive oil in a large pot over medium heat. Add chopped red onion and minced garlic, seasoning lightly with salt. Sauté for about 5 minutes or until the vegetables soften and become fragrant.
  • Add the chipotle peppers, cumin, coriander, and cooked potatoes to the pot. Pour in the broth and milk. Stir everything together and bring it to a gentle boil. Lower the heat and simmer for 10 minutes, allowing the flavors to blend.
  • Carefully transfer the mixture to a blender (or use an immersion blender) and puree until smooth. Return the soup to the pot and stir in grated cheddar cheese until melted. Adjust seasoning with salt and pepper to taste.
  • For an extra pop of color and flavor, mix diced bell peppers, cilantro, lime juice, and red onion in a small bowl. Ladle the hot soup into bowls and top with this vibrant pepper salsa. Enjoy your homemade masterpiece!
