I recently tried this Pumpkin Whipped Feata Dip, and I can confidently say it’s one of the most delicious autumn appetizers I’ve made! The creamy feta blends so beautifully with the subtly sweet pumpkin, and when paired with walnuts and a drizzle of honey, it’s a match made in heaven. - 8 ounces 225g feta cheese
- 1/2 cup 120g plain Greek yogurt
- 3/4 cup 180g canned pumpkin puree (unsweetened)
- 1 tablespoon honey
- 1/2 teaspoon fresh or dried thyme
- 2 tablespoons chopped walnuts optional, for topping
Add your block of feta and Greek yogurt into a food processor. Blend until the mixture is smooth and creamy. It might take a few minutes, so be patient and scrape down the sides to ensure everything blends evenly.
Next, toss in the canned pumpkin puree, honey, thyme, and a pinch of freshly cracked black pepper. Blend again until fully combined. Taste and tweak the sweetness or seasoning to your liking.
Transfer the whipped feta mixture into a bowl, cover it, and pop it into the fridge for about 30-60 minutes. This step helps to firm up the dip, making it easier to serve and enhancing the flavors.
