I recently tried this Pumpkin Whipped Feata Dip, and I can confidently say it’s one of the most delicious autumn appetizers I’ve made! The creamy feta blends so beautifully with the subtly sweet pumpkin, and when paired with walnuts and a drizzle of honey, it’s a match made in heaven. The fresh thyme adds a perfect herbaceous note that ties it all together.

Ingredients
  

  • 8 ounces 225g feta cheese
  • 1/2 cup 120g plain Greek yogurt
  • 3/4 cup 180g canned pumpkin puree (unsweetened)
  • 1 tablespoon honey
  • 1/2 teaspoon fresh or dried thyme
  • 2 tablespoons chopped walnuts optional, for topping

Instructions
 

  • Add your block of feta and Greek yogurt into a food processor. Blend until the mixture is smooth and creamy. It might take a few minutes, so be patient and scrape down the sides to ensure everything blends evenly.
  • Next, toss in the canned pumpkin puree, honey, thyme, and a pinch of freshly cracked black pepper. Blend again until fully combined. Taste and tweak the sweetness or seasoning to your liking.
  • Transfer the whipped feta mixture into a bowl, cover it, and pop it into the fridge for about 30-60 minutes. This step helps to firm up the dip, making it easier to serve and enhancing the flavors.
  • Before serving, top the dip with fresh thyme sprigs, chopped walnuts, and a generous drizzle of honey. Serve it alongside toasted bread, crackers, or even fresh veggie sticks. Voila! Your Pumpkin Whipped Feta Dip is ready to enjoy.

Notes

  • Use Traditional Feta: Go for a block of feta in brine rather than crumbles. It blends smoother and has a richer taste. Sheep’s milk feta is especially good for its sharper, tangier flavor.
  • Chill for the Right Consistency: Allow at least 30 minutes of chill time so the dip sets properly. This step also balances the flavors as they meld together.
  • Adjust Sweetness to Taste: If you prefer a sweeter dip, add an extra tablespoon of honey. Don’t forget that you can always drizzle more on top when serving.
  • Toast Your Toppings: Lightly toast the walnuts for a nuttier, more dynamic flavor. It only takes a couple of minutes, but it makes a big difference!
