Ingredients
  

  • 2 chicken breasts skinless or with skin
  • 2 tbsp Italian seasoning
  • 2 tbsp olive oil
  • 2 garlic cloves minced
  • 1 tsp salt
  • 1 tsp black pepper

Instructions
 

  • Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper, making cleanup easier and ensuring the chicken doesn’t stick.
  • Rinse your chicken breasts under cold water and pat them dry with a paper towel. Combine olive oil, Italian seasoning, and minced garlic in a mixing bowl to create a delicious herb oil. Coat each chicken breast generously with the mixture, making sure it’s evenly covered. Sprinkle with salt and black pepper for added flavor.
  • If time allows, marinate the chicken for at least 30 minutes. This helps enhance the depth of the flavors. If you’re short on time, the dish will still turn out tasty even without marinating—but trust me, it’s worth the wait!
  • Place the chicken in the baking dish and roast uncovered in the preheated oven for 25–30 minutes. It’s done when the internal temperature reaches 165°F. I like to baste the chicken with pan juices halfway through cooking to keep it extra juicy.
  • Once the chicken is done, remove it from the oven and allow it to rest for about 5 minutes. Resting locks in the juices, making every bite moist and flavorful. Garnish with fresh parsley or basil for a beautiful presentation.

  • Customizations: Add lemon zest or juice for a citrusy touch. Try adding olives, capers, or sun-dried tomatoes for a Mediterranean twist.
  • Meal Prep: Marinate and store the chicken in an airtight container for up to 2 days before roasting.
  • Storage: Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently to maintain moisture. You can also freeze the cooked chicken for up to 3 months.
