- 2 cups cremini or button mushrooms sliced

- 2 cups shredded rotisserie chicken dark and white meat
- 1 cup heavy cream or half-and-half for a lighter option
- 1/2 cup chopped celery
- 1/2 cup diced carrots

Start by heating your olive oil or butter in a large stockpot over medium heat. Toss in the diced onion and garlic and sauté for about 3 minutes, or until fragrant and translucent. This creates the base of your soup, laying down a backdrop of rich aroma.
Next, stir in the mushrooms and cook until softened, about 5 minutes. Sprinkle in the dried thyme, smoked paprika (if using), and a pinch of salt and pepper. The mushrooms will absorb these seasonings, enhancing their natural earthy flavor.
Pour in the chicken broth and stir in the diced celery and carrots. Bring this mixture to a gentle boil. Lower the heat to a simmer and cook for about 10 minutes, allowing the vegetables to become tender.
