The other day, I found myself craving something warm, hearty, and comforting. I decided to try making Sausage Potato and Kale Soup, and it was nothing short of magic in a pot! The creamy broth combined with the smoky, savory sausage, tender potatoes, and fresh kale created flavors that were simple yet so satisfying.

Start by browning the sausage in a large soup pot over medium-high heat. Cook for about 10 minutes, stirring occasionally, until it’s fully cooked and golden. Drain any excess fat from the pot.
Once the sausage is browned, add the chicken broth, potatoes, and seasonings like dried oregano, red pepper flakes, and black pepper. Bring the mixture to a boil, then reduce the heat to a gentle simmer. Cook for about 30 minutes or until the potatoes are tender.
Now it’s time for the magic! Add the half-and-half, whole milk, and kale to the soup. Stir everything together and let it simmer for an additional 10 minutes until the kale is tender and the flavors meld beautifully.
Ladle the soup into bowls, garnish with a sprinkle of red pepper flakes or freshly cracked black pepper, and enjoy it warm with crusty bread or crackers on the side for an extra treat!
