The first step is to build flavor into the beef. Combine soy sauce, sesame oil, rice vinegar, fresh ginger, garlic, honey, and cornstarch in a mixing bowl. Add a little salt and pepper for seasoning. Toss the thinly sliced beef into the mixture, making sure each piece is well-coated. Cover the bowl and marinate in the fridge for at least 30 minutes. Trust me, this step makes all the difference!
Heat one tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once the oil is hot, cook the marinated beef in small batches for 2–3 minutes. Stir frequently, and don’t overcook to keep it tender. Remove the beef from the skillet once it’s cooked and set it aside.
Using the same skillet, add the remaining tablespoon of vegetable oil. Toss in the sliced red and yellow bell peppers along with the snow peas. Stir-fry for 3–4 minutes until the veggies are slightly crisp yet tender. The bright colors will instantly make the dish more exciting!
Return the cooked beef to the skillet and mix it well with the vegetables. Sprinkle sesame seeds and green onions over the top for a boost of texture and freshness. Stir everything for another minute to blend the flavors perfectly.
