When I first made these smoked gouda mashed potatoes, I knew they were going to be incredible. The creamy texture, the rich buttery flavor, and that smoky undertone from the gouda cheese completely elevated the dish.

Ingredients
  

  • Red potatoes
  • Unsalted butter
  • Half-and-half
  • Smoked gouda cheese shredded
  • Salt
  • Black pepper

  • Wash and chop your red potatoes into even-sized pieces so they cook evenly. Place them in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook for about 10-15 minutes, until the potatoes are fork-tender.
  • Drain the cooked potatoes and set them aside. Lower the heat on your stove and use the same pot to combine butter and half-and-half. Stir until the butter is completely melted, creating a rich, creamy base for the potatoes.
  • Return the potatoes to the pot and use a masher to break them down. Don’t go overboard here—to keep them fluffy, handle the potatoes gently.
  • Fold in the shredded smoked gouda, allowing it to melt into the buttery mashed potatoes. Add salt and pepper to taste, adjusting as needed. Stir everything together until smooth and creamy.
  • Transfer the potatoes to a serving bowl. Add a pat of butter on top, sprinkle with fresh herbs like chives or parsley, and get ready to wow your guests!

Notes

  • Go Fresh: Shred the smoked Gouda yourself instead of using store-bought pre-shredded cheese. It melts better and creates a creamier texture.
  • Salt the Water: Don’t forget to salt the boiling water generously. It’s the easiest way to add flavor to the potatoes from the start.
  • Low Heat for Butter: Melt the butter and half-and-half slowly over low heat to prevent burning and ensure a smooth mixture.
  • Handle Gently: Overworking the potatoes releases starch, which can make them gummy. Mash lightly and fold everything carefully.
  • Taste as You Go: Smoked gouda has a distinct flavor, so make sure to taste and adjust seasonings gradually.
