Spicy Chicken Chipotle Pasta Recipe

Ingredients
  

  • 12 oz penne pasta
  • 1 lb boneless skinless chicken breast, diced
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 yellow onion minced
  • 1 red bell pepper diced
  • ¾ lb asparagus coarsely chopped
  • 1 cup frozen peas
  • 1 7 oz can chipotle peppers in adobo sauce
  • 2 cloves garlic minced

Sauce:

  • ¼ cup honey
  • 2 cups heavy cream
  • ½ cup shredded parmesan cheese
  • Salt and pepper to taste

Garnish:

  • Chopped cilantro
  • Shredded parmesan cheese

Instructions
 

  • Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  • Dice the chicken breast into 1-inch pieces and season with salt and pepper. Trim the tough ends off the asparagus and prepare the remaining vegetables.
  • Heat olive oil in a large skillet over medium-high heat. Add the chicken and sauté until browned and fully cooked.
  • Add the onion, red bell pepper, asparagus, and frozen peas to the pan. Sauté for about 10 minutes, or until the vegetables are tender.
  • Remove the chipotle peppers from the can, reserving the adobo sauce. Dice the peppers into small pieces.
  • Stir 3 tablespoons of diced chipotle peppers and garlic into the skillet with the chicken and vegetables. Cook for another 2 minutes.
  • Add ¼ cup adobo sauce, honey, heavy cream, parmesan cheese, and salt and pepper to the pan. Stir to combine.
  • Mix in the cooked pasta and bring to a gentle boil. Reduce heat to low and let simmer for 5 minutes.
  • Remove from heat and serve hot, garnished with chopped cilantro and extra shredded parmesan cheese. Enjoy!

Notes

  • Store in an airtight container for up to 4 days.
  • Reduce heat by omitting chipotle peppers and using less adobo sauce.
  • Reheat gently with a splash of cream or broth.
